How To Go Vegetarian For Thanksgiving
Thanksgiving can be tough for vegetarians, but you shouldn't have to compromise quality to get a great vegetarian Thanksgiving meal. Instead, follow these quick recipes for a vegetarian thanksgiving feast that will leave even the carnivores in your life drooling.
Thanksgiving Tofurkey
Tofurkey
1 cup Dried Cherries
1 Large Onion
1 tbsp. Olive Oil
Vegetable Gravy
Preheat oven to 345 degrees. Dice onion and sautee with cherries until they are carmelized. Line a baking pan with tin foil and place tofurkey inside. Pour onions and cherries over tofurkey. Wrap tofurkey with tin foil and bake for 45 minutes. Slice and top with gravy to serve.
Twice-Baked Sweet Potato
1 Sweet Potato
4 oz. Cream Cheese
1/2 tsp. Cinnamon
1/2 tsp. Nutmeg
2 tsp. Brown Sugar
1/2 stick Butter
Preheat oven to 375 degrees and bake sweet potato until tender. Remove and cut open down the middle. Scoop insides of sweet potato out into a mixing bowl. Combine with cream cheese, cinnamon, nutmeg, brown sugar, and butter. Scoop back into sweet potato and bake for an additional 15 minutes, then serve.
Sauteed Chard
1 bunch Rainbow Chard, chopped
2 cloves Garlic, diced
1/2 Onion, diced
1 tbsp Olive Oil
1 tbsp Dijon Mustard
Sautee onion and garlic for 5 minutes. Add rainbow chard and sautee until tender. Finish with dijon mustard and serve.
